Sun Dried Tomato Chicken Tortellini Soup



Sun dried tomato chicken tortellini soup. Yes, that is one long name, but I can't think of anything else so there you go. This soup is divine. So easy to make. Although I don't have any claims about it being low fat or cheap! Anyhow try it! And it's even good for leftovers. Surprisingly my kids eat this right up.
1 package Cheese Tortellini
2 cans chicken broth
2 Chicken breasts cooked and shredded (I actually use canned chicken)
1 jar Alfredo sauce
1/2 jar sun dried tomatoes
3 handfuls of spinach
Cook chicken and shred. Cook tortellini according to directions and set aside. In large pot add chicken broth and Alfredo sauce and simmer on low (add a pinch of pepper if desired). Add chicken, sun dried tomatoes, and spinach to sauce. Cook for a few minutes until the spinach starts to wilt down a little. Then add tortellini and serve.

South Western Goodness

I got this recipe from a good friend from West Virginia. It is so delicious and so easy. I especially love it for Sunday...you put it in, go to church for 3 hours, come home and add the rest of the ingredients. While setting the table, changing clothes, or whatever while it finishes cooking.



3-4 chicken breasts
1/2 pkg. of taco seasoning
1 can black beans
1 can corn
1 cup salsa
1 8oz pkg. cream cheese

Cook chicken and taco seasoning in crockpot on high for 3 hours. Shred chicken. Add beans, corn salsa and cream cheese (cut into chunks). Stir and let cook for another 1/2 hour. Stir before serving.

Eat on tortillas, rice, or with corn chips.
