Simple and Quick Cinnamon Rolls

I first had these delicious rolls when a good friend left them as a surprise for my birthday. I had to get the recipe because they were so good and was very happy to find out that not only were they yummy they were also really easy to make. Hope you enjoy them as much as I have. Oh and just as a side note, this makes 2 large trays, I usually half it and it is always more than enough for us.

Dough:
3 1/2 cups warm water
1 cup oil
1/2 cup sugar
5 Tbsp. yeast
3 tsp. salt
3 eggs
10 1/2 cups flour

Combine: water, oil, sugar and yeast in bowl and let sit for 15 minutes. Put salt and flour in mixer and mix. Add eggs and mix. While mixing add wet ingredients and knead until dough holds together (add flour if dough gets sticky) for about 5 minutes. Split dough in half and roll into a rectangle. Spread with soft butter using the back of spoon. Top with cinnamon and sugar. (1 cup sugar and 2 Tbsp cinnamon for each rectangle) Roll up rectangle length wise and cut using dental floss. Place rolls on greased pan an inch apart. Let rolls raise until desired size. Bake at 375 for about 15 minutes. When still slightly warm, top with Buttercream icing that is runny. (Icing: combine about 1/2 pkg of powder sugar, 1 tsp vanilla, 1 Tbsp butter and milk to desired consistency, about 1 or 2 Tbsp)

Also I don't have a fancy mixer I make these using my hand held mixer, or mostly just by stirring by hand:) So you can make them no matter what.
