I had this meal at a friends house once and had to get the recipe. Imagine my surprise when I found out not only is it yummy but easy too. All you need is one skillet pan to make it in. That means less clean up, and that is always a good thing.
1 Tbsp oil
1 can of chicken or 1-2 chicken breasts cut into bite size pieces
1 can of chicken broth
1 can of tomato sauce
1/2 pkg. of taco seasoning
1 can corn (drained)
1-2 cups of minute rice (depends on how soupy you like it)
tortilla chips
grated cheese
sour cream
Cook chicken in oil until browned. Add broth, tomato sauce, and taco seasoning. Bring to a boil. Reduce heat, cover and simmer for 5 minutes. Add corn. Bring to full boil, stir in rice, cover and remove from heat. Let sit for 5 minutes. Fluff with fork. Serve with cheese and sourcream and eat with chips.
